Omistuskirjoitus / Dedication

Seuraavan kerran kirjoitankin Tartusta.

The most wanted (and the simplest) dessert of the summer and some pictures from about a month ago. So easy, I promise, a dessert for dummies. Also it suits tonight because it's quick to write, and I don't got much time now. Van is packed and waiting, in the morning we'll settle on the road (with an annoying twist of ferry). Next post I'll write to you from Tartu, my new hometown.

Vaniljapannacotta / Vanilla pannacotta

1dl Sokeria / 1dl Sugar
5dl kuohukermaa / 5dl Heavy whipping cream
1 vaniljatanko / 1 Vanilla pod
3 liivatelehteä / 3 Gelatin sheets

Halkaise vaniljatanko ja raaputa siemenet kerman joukkoon kattilaan, lisää sokeri, kiehauta varovasti. Anna jäähtyä hieman ja puristele kuivaksi kylmässä vedessä liotetut liivatelehdet, sekoita perusteellisesti. Kaada kulhoihin, anna jähmettyä jääkaapissa muutama tunti tai vaikka yön yli.

Slice the vanilla pod, scrape the seeds and mix with cream in a pot, add sugar and carefully bring to simmer. Let the cream cool down, squeeze the gelatin sheets dry after soaking them in a bowl of cold water, add to cream and thoroughly whisk. Pour it all into cups and let it stay put in fridge for few hours or overnight.

Itse vähennän mielelläni sokerin määrää neljäsosadesillä, ja siltikin tällaiselle suolaisen ystävälle on vähän liian makeaa. Kesäsuosikkini onkin yhdistää pannacotta punaherukoihin (taas näitä...) ja varovasti timjamiin (taas tätäkin...)

I'm more into salty tastes, so this pannacotta is often too sweet for me, even if i cut down the sugar by 1/4 dl. Now that the summer is still in season I'd recommend to serve the treat with red currants (again) and a hint of fresh thyme (again again...)

One weekend we started the car and ventured on a mini roadtrip. It's always so surprising how much new and interesting there's hidden so close to home. First we headed of to this one legendary "store", they sell Everything you could never imagine anyone selling, the place is Huge and built in an old greenhouse. Then on our way to Billnäs we got stuck in Fiskars, both old idyllic factory villages, Fiskars you should know from the famous orange scissors. Originally I was hunting for pineapple mint, believe me when I say - that's the secret of a damn good mojito! In the end I didn't find the mint, it was melting hot weather, but it was great and all worth it.
